Well, its called bread but its more of a tea cake really.
Its originally a Zuchini bread... but just put pumpkin in instead to use up some of your innards.
1.5 cups flour
1 cup veg oil
3 tsp vanilla
2 cup grated pumpkin (or just your scrapings as they are!)
.25 tsp Baking Powder
1 tsp baking soda
1 cup chopped nuts (peacan or wall)
3 cups flour
1 tsp salt
2 tsp cinnamon
Mix eggs, oil, sugar, vanilla
Mix in Pumpkin and dry ingredients
Grease 2 small loaf pans
350F for 50 mins or until a clean toothpick test.
Its really nice just with a blob of butter per slice, also a really handy present if you are invited aroud someone elses house.
Can be frozen for later use as well.
